Patsy Johnson from Salem, Missouri, shared this recipe with us. She writes, "I learned how to make this when I was managing a hometown restaurant. It can be very addictive in the summer months!"
6 to 8 tomatoes, chopped
1 onion, finely chopped
1 cucumber, peeled and chopped
1 green pepper, chopped
2 T. fresh parsley or cilantro, chopped
1 clove garlic, finely chopped
1 to 2 stalks celery, chopped
2 T. lemon juice
salt and pepper to taste
4 c. tomato juice
4 drops hot pepper sauce
Optional: sour cream
Combine all ingredients except sour cream, if using, in a large lidded container or gallon-size Mason jar. Refrigerate until well chilled. Dollop servings with sour cream, if desired. Serves 12 to 15.
