Canning: Sweet Relish

Last Wednesday found me canning sweet relish. So I thought I'd post the recipe and pics. here.


Sweet Pickle Relish

Ingredients:
3 quarts (12 cups) cucumbers, grounded
1/2 cup + 1 teaspoon salt
3 onions, grounded
2 green peppers, grounded
5 cups sugar
1 teaspoon tumeric
1 tablespoon mustard seed
2-2 1/2 cups vinager

Coarsely grind the cucumbers. (I left the skins on washed real well). Add 1/2 cup of salt to ground cucumbers. cover with water and let stand for 3 hours.


While cucumbers are soaking grind the carrots, onions and green peppers.

After 3 hours, drain cucumbers. Mix vegetables with remaining ingredients in a large kettle. Bring the mix to a boil. Boil until cucumbers are tender about 5-10 minutes.


Place relish in jars. Seal.


Place in canner bath and boil for 15 minutes. Makes about 5 & 1/2 quarts.

  1. Sounds good to me!! I made my first dill pickles and canned them this summer! They are so pretty in the jars. Oh and they were good tasting too!

  2. I don't think I've seen a recipe for sweet relish before. This looks really good. I wonder how it would be using something like Splenda instead of sugar.

  3. My recipe is very similar to yours. Some yrs if the cukes don't do well, I substitute zucchini and it works just as well. I love this relish.
